Red Pepper Purée
~ 3 medium peppers will yield approx. 12-14 oz puree
Ingredients:
- 3 medium red peppers. Washed and cut in consistent chunks.
- ¼ cup water
Instructions:
- Place chopped peppers and ¼ cup of water into a small pot over medium heat.
- Stir occasionally. Let peppers steam until they become soft.
- When soft, take peppers off of heat and place on the counter.
- Using an immersion blender or standing blender, blend peppers until a creamy and smooth consistency forms.
- When done, transfer puree to a glass container and let it cool completely before putting it in the fridge.
- You can also freeze small portions of the purée in a freezer safe tray or container. I use the Wee Sprout silicone mold to freeze 1oz serving sizes.
- Once the portions are frozen, I pop them out of the mold and store them in a freezer safe bag labeled with the day I made them and the expiration date.
- When ready to serve, portion out your baby's meal into a separate bowl.
- If needed, add liquid of your choice (breastmilk, formula or water) to the puree until you reach the desired consistency for your baby.
Note: Refrigerated Pepper Purée is good for 3 days. Frozen Pepper Purée is good for 3 months.
