8 oz smoked tofu, such as Soy Boy brand
1 shallot, minced
5 cornichons, thinly sliced (about 2 TBSP)
2 tsp extra virgin olive oil
1 tsp Dijon-style mustard
1/2 tsp dried dill
1/4 tsp freshly cracked black pepper
Grate tofu into a mixing bowl. Add all other ingredients and stir to combine. Serve at once or chill until ready to use.
