Deconstructed Stuffed Mushroom BBQ Burgers Recipe:
Ingredients:
2 pounds ground beef (15%)
1 tablespoon worcestershire sauce
Salt
Pepper
8 ounces cream cheese
3 cloves garlic (minced)
5 slices bacon (crumbled)
3 heaping tablespoons (sliced) green onion
5 ounces (grated) parmesan cheese - divided
1/2 teaspoon onion powder
1/4 teaspoon salt
12 ounces sliced mushrooms
2 tablespoons butter
2 cloves garlic (minced)
1/4 cup beer (optional)
6 large hamburger buns
Green leaf lettuce
Condiments - mayonnaise, mustard, etc.
Instructions:
In a mixing bowl combine cream cheese, garlic, bacon, green onion, about 3 ounces of the parmesan, onion powder and salt. Mix well. Form into a 6" log, place in saran wrap, roll and place in refrigerator for 1-2 hours, or until somewhat firm.
Combine ground beef, worcestershire, salt and pepper to taste, and divide into 12 parts. Flatten each piece until very, very thin. Remove cream cheese log from fridge and slice into 6 even discs. Place one disc in the center of one of the flattened patties and top with additional flattened patty. Seal edges and flatten. (You definitely don't want it to be super balled up at this point or your end result will be a huge burger ball.)
Lightly grease the grill and prepare it for direct heat grilling. Place burgers on grill, cover and cook for 4-5 minutes on each side. Remove from grill and wrap in foil.
Place butter in medium skillet over medium heat and melt. Add mushrooms and garlic. Cook for 4-5 minutes and add beer. Cook for additional 4-5 minutes, or until beer has mostly cooked out and mushrooms are a golden brown.
Place your burger on your bun, top with sauteed mushrooms and a sprinkling of parmesan cheese. Add lettuce and any other condiments you choose. [We, personally, kept them simple and just used the mayo and the lettuce so we could really taste the burger. The filling is very, very flavorful and delicious!]
