Koicha is a method of preparing matcha where the tea becomes thick, like liquid yogurt. For koicha you need more matcha (4-5 g) and less water (about 30 ml). The water temperature is the same as for preparing usucha (thin tea). Slow whisking movements are necessary (koicha should not be foamy). Its taste should not be overly bitter or astringent, so it is important to use high ceremonial grades of matcha. They are sweet and not astringent. You will feel a strong umami.

Katakuchi is a bowl with a spout, used for preparing matcha shots (matcha with water). It allows easy pouring of the drink into another container, such as a smaller cup or glass.
If you want a full set for a true matcha enthusiast, you'll need a bamboo whisk (chasen) and a matcha spoon (chashaku).
A beautiful and convenient bowl is perfect for creating a special atmosphere. You need to experience the katakuchi to enjoy preparing matcha.

A classic Japanese drink where matcha and water are whisked until thick foam forms (foam is an indicator of matcha quality). Not all matcha grades are suitable for matcha shots. Use only ceremonial and high ceremonial grades for preparation.
Matcha shot should be slightly or not at all bitter, with a sweet or creamy aftertaste.

Take a bowl (wider than a regular mug) and whisk the matcha with W-shaped movements, barely touching the bottom. Whisk for 30 seconds until a dense foam forms.

How to properly store matcha?
Matcha should be stored in a tightly sealed package or can. It is strictly forbidden to store the powder in a transparent glass jar or container, as light and oxygen degrade the beneficial properties of the tea. It's better to use iron Japanese cans for storage at home.
Once opened, matcha can be stored for 3 months (you can transfer the tea from the package to the can). We recommend consuming the contents of our package within 1-1.5 months, as this ensures the maximum intake of beneficial substances.
It can be stored at room temperature if you drink matcha quickly, but not above 22°C. However, it's better to store matcha in the refrigerator. If you do not plan to drink it for a long time, put the matcha in the freezer.
The chashaku spoon is not just a beautiful piece of bamboo, but the most precise scale for matcha. You can check it yourself: one chashaku of matcha equals exactly 1 gram of tea. If you take a slightly bigger scoop, it will be 2 grams.
It also allows you to conveniently take matcha from a package or can.
Care: do not wash in the dishwasher, it can be rinsed and laid out / stood up to dry.
