Fried Corn Relish
1 - 2 c. corn kernels (fresh or frozen)
½ - 1 jalapeno pepper, finely diced (optional)
¼ c. onion, finely diced
¼ c. bell pepper, finely diced
1 - 2 T. butter
salt and pepper, to taste
Preheat a heavy skillet (cast iron preferred) to medium. Melt the butter. Add the onions and cook until just beginning to brown. Add the corn and diced peppers and cook until some of the kernels are beginning to brown and the pepper is slightly softened.
Serve on tacos, burritos, fish, or even in salad.
