Harissa Spiced Sandwich

Serves 4

1 (14-ounce) package firm tofu, pressed overnight and cut into ½-inch slices or 4 seitan cutlets, sliced

1 (15-ounce) can chickpeas, rinsed and drained

2 tablespoons harissa paste

1 tablespoon olive oil

1 tablespoon reduced-sodium tamari

1 medium red onion, sliced

4 garlic cloves, minced

Neutral oil, as needed

1 ½ cups vegetable broth

2 cups chopped ripe tomatoes

2 bay leaves

2 cinnamon sticks

Garnish: lemon slices, hummus, lettuce, pita

1. Combine the tofu or seitan, chickpeas, harissa, olive oil and tamari in a shallow dish. Set aside for 5 minutes to marinate.

2. Heat 1 teaspoon oil in a large skillet over medium heat. Stir in the chickpea mixture and cook until golden, about 7 minutes. Stir in the onion and garlic and cook for another 4 minutes.

3. Stir in the broth, tomato, bay leaves and cinnamon sticks. Bring to boil and reduce to simmer. Cook until the sauce is almost evaporated, about 15 to 20.  

4. Serve the mixture in a warmed pita with hummus, lettuce and a squeeze of lemon juice.
