BASIL INFUSED COLLINS

Notes: this recipe will make about 1 cup of basil infused simple syrup. Any extra can be stored in an airtight container in the refrigerator for a week or so.

Ingredients:

2 giant handfuls fresh basil leaves

1 cup simple syrup

gin

fresh lemons

club soda or sparkling water

ice

In a blender whiz together until finely chopped the simple syrup and basil leaves. Run the mixture through a strainer to collect any larger leaves. Your basil infused simple syrup is now finished, see notes for storage.

Fill a glass {a Collins glass if you have one} with ice. Pour in 2 ounces of gin, 1 ounce basil infused simple syrup and juice from 1/2 lemon. Give it a gentle stir and top with club soda.
