- 1 (25 oz.) can chickpeas, drained
- ½ cup tahini
- ¼ cup light sesame oil (not toasted) or olive oil
- 2 small cloves garlic, peeled, crushed and chopped fine
- salt and freshly ground pepper to taste
- 1 ½ tsp ground cumin
- 3 Tbsp lemon juice
- ⅓ cup water, more or less
- Place everything except water in a mixing bowl, mash with a potato masher.
- Add water as needed.
- Taste and add more garlic, salt, lemon juice or cumin as needed.
