Cowboy Cookies

Lightly adapted from Laura Bush’s recipe for cowboy cookies

Yields 36 five-inch cookies, or 72 small cookies

Ingredients

1 ½ cups butter, softened

1 ½ cups brown sugar

1 cup granulated sugar

1 tablespoon cinnamon

3 eggs, at room temperature

3 cups all-purpose flour

1 tablespoon baking powder

1 tablespoon baking soda

1 tablespoon cinnamon

1 teaspoon salt

3 cups rolled or quick oats

3 cups chocolate chips

2 cups pecans, chopped

2 cups sweetened flaked coconut

Directions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Cream together the butter and sugars. Beat in the eggs one at a time. Beat in the vanilla.
  3. Whisk together the flour, salt, baking powder, baking soda, and cinnamon.
  4. Mix the dry ingredients into the butter mixture.
  5. Mix in the oats, chocolate chips, pecans, and coconut.
  6. For large cookies drop ¼-cupfuls of dough onto a baking sheet. Use about 2 tablespoons for small cookies.
  7. Bake large cookies 16-18 minutes, small cookies 12-15 minutes or until they turn a little brown around the edges, rotating the pan halfway through. Let cool and enjoy!
