Cowboy Cookies
Lightly adapted from Laura Bush’s recipe for cowboy cookies
Yields 36 five-inch cookies, or 72 small cookies
Ingredients
1 ½ cups butter, softened
1 ½ cups brown sugar
1 cup granulated sugar
1 tablespoon cinnamon
3 eggs, at room temperature
3 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon baking soda
1 tablespoon cinnamon
1 teaspoon salt
3 cups rolled or quick oats
3 cups chocolate chips
2 cups pecans, chopped
2 cups sweetened flaked coconut
Directions
- Preheat the oven to 350 degrees Fahrenheit.
- Cream together the butter and sugars. Beat in the eggs one at a time. Beat in the vanilla.
- Whisk together the flour, salt, baking powder, baking soda, and cinnamon.
- Mix the dry ingredients into the butter mixture.
- Mix in the oats, chocolate chips, pecans, and coconut.
- For large cookies drop ¼-cupfuls of dough onto a baking sheet. Use about 2 tablespoons for small cookies.
- Bake large cookies 16-18 minutes, small cookies 12-15 minutes or until they turn a little brown around the edges, rotating the pan halfway through. Let cool and enjoy!
