The Fault In Our Stars

Gouda Rosemary Crackers with Cherry Tomatoes

In The Fault in our Stars, Augustus makes Hazel a Dutch Cheese and Tomato sandwich. Gouda is the most popular Dutch cheese. Here is our take on this sandwich, Gouda Rosemary Crackers with Cherry Tomatoes.

Ingredients:

½ Cup Unsalted Butter

2 Cups Gouda Cheese, grated

⅔ Cup All Purpose Flour

¼ teaspoon Salt

¼ teaspoon Fresh Rosemary finely chopped

10 Cherry Tomatoes, sliced in half

1.In a stand mixer with the paddle attachment mix the butter until soft, add the cheese and scrape down the sides of the mixing bowl with a spatula.

 

2. In a large bowl add flour, salt and rosemary, stir together with a spoon, add all of the flour mixture to the mixing bowl, pulse the mixer several times to prevent the flour from going all over the counter, then turn on low and mix until just combined.

3. Divide dough in half, wrap with plastic wrap and chill for 1 hour up to overnight.

 

4. On a piece of parchment paper lightly dusted with flour, roll out the dough until about ¼” thick using a rolling pin, cut crackers with a circle cutter or using a pizza pie cutter cut out squares or rectangles.

 

5. Bake at 325 degrees on a parchment lined half sheet baking pan until very light golden brown on the edges. When cooled, serve with a half cherry tomato on top, enjoy.

In our Book of the Month The Fault in our Stars, Augustus makes Hazel a Dutch Cheese and Tomato sandwich to celebrate their trip to Amsterdam. Gouda is the most popular Dutch cheese named after the city of Gouda in the Netherlands. Here is our adaptation of this sandwich, Gouda Rosemary Crackers with Cherry Tomatoes.
