Granola

3 cups oats (quick or rolled)

1/4 cup canola/vegetable/sunflower/olive oil

1/3- 1/2 cup honey (depending on how sweet you like it)

dash of salt

1/4 - 1/2 cup water (optional, if you like more clusters)

1 tsp. cinnamon (optional)

Bake at 350 on an ungreased cookie sheet, stirring every 5 minutes. until oats look toasty (about 15 minutes). The clusters will crunch up a bit once cool. Add toasted almonds, dried fruit, etc. and store in an airtight container.

Mocha Coconut Granola

3 cups oats (quick or rolled)

1/8 cup of unsweetened baking cocoa

1 tsp of espresso powder or an instant coffee packet (like Starbucks VIA)

1/8 cup canola/vegetable/sunflower/olive oil

1/8 cup coconut oil

1/3- 1/2 cup honey (depending on how sweet you like it)

dash of salt

1/4 - 1/2 cup water (optional, if you like more clusters. You could also use strong brewed coffee in place of the water.)

Bake at 350 on an ungreased cookie sheet, stirring every 5 minutes until toasty. Sprinkle shredded coconut on top in the last five minutes of baking.
