Ingredients:

1 tablespoon vegetable oil

1 onion, thinly sliced

8 ounces shiitake mushrooms, thinly sliced

6 garlic, minced

½ cup vegan mayonnaise

¼ cup cilantro

1 teaspoon Sriracha

 

1 (24-inch) baguette

1 recipe Char Siu tofu

Daikon and Carrot Pickles

cilantro leaves

jalapeno, thinly sliced

1) Heat the oil on medium heat in a skillet.. Stir and cook the onion, mushrooms and garlic until the onions and mushrooms are golden, about 8 minutes. Set aside.

2) Combine the mayo, cilantro and Srirach in a personal blender. Blend until smooth. Set aside.

3) Cut the baguette into 4 (6-inch) sections. Slice each section in half horizontally. Scrape some of the inside of the bread out. Toast the bread.

4) To assemble the sandwich, spread the sauce equally on each bread. Divide the tofu and mushroom mixture equally on each sandwich. Top with pickles, cilantro and jalapeno. Serve.
