Basic Waffles

Ingredients
2 eggs, separated
1 cup milk
¼ cup corn oil
2 Tbls sugar
½ teaspoon salt
1 cup flour
2 teas baking powder
Directions
1. Preheat the waffle iron.
2. In a large mixing bowl, whisk together all dry ingredients.
3. Separate the eggs, placing the whites in a small mixing bowl
and set aside.
4. Mix together the egg yolks, milk and oil in a pourable bowl
or container. Mix into the dry ingredients mixture.
5. Beat whites until soft peaks form or till moderately stiff. Fold
egg whites into batter until well incorporated. The less stirring at
this point the better the waffles.
6. Single most important step is to oil or spray the waffle grids
prior to cooking and a few times in between each waffle as well.
7. Pour enough batter into waffle iron to cover the inner bottom
half but leave an uncovered edge perhaps ¼ to ½ inch around
edges. The batter will expand while cooking.
8. Remove waffles with a fork; serve hot with butter and syrup.
