 Fish Taco Guideline

Prep Time Needed:         1.5 hours

Helpers:                 4-5 people

Feeds:                         130  people

Fish Taco:

  • The fish needs to start cooking right away, as you’ll need to cook about 4 trays or more.  Preheat 475*
  • Don’t thaw. Lightly grease the tray.
  • Lay out in a single layer per tray. Cook @ 475* (convection) for ~20 min, turn them over halfway through cooking.
  • Cooking suggestion: It’s better if it’s crunchy, so I actually just broiled them, but you’ll need to keep an eye on them and switch the top and bottom layer. Careful not to burn it if you’re broiling!  You can either broil the whole time or just the last 10 minutes, depending on preference.

Fish sticks (12 bags of 60 from Costco)

Costco fish sticks much preferred over others. It is filet and bigger. We had no leftovers, everyone ate enough. If budget permits, next time I would get 1 more bag. A good estimate is 5 fishsticks per person.

For white sauce:

The amounts are rough estimates. Adjust as you go.

  • In a medium bowl, mix together yogurt and mayonnaise. Gradually stir in fresh lime juice until consistency is slightly runny. Season with jalapeno, capers, oregano, cumin, dill, and cayenne.
