 Baked Apple Oatmeal (Source: adapted from Taste of Home)

Ingredients:

3 cups oats

1/2 cup packed brown sugar

2 teaspoons baking powder

1 tablespoon cinnamon

2 eggs

2 cups milk

2 medium apple, chopped (I left the skin on, but you can peel if you prefer)

Directions:

1. In a large bowl, combine the first six ingredients. Whisk eggs and milk; stir into dry ingredients until blended. Let stand for 5 minutes. Stir in the apples.

2. Transfer to an 8-inch square dish coated with cooking spray. Bake, uncovered, at 350 degrees F for 35-40 minutes or until edges are lightly browned. Serve with additional milk if desired.
