Jack Sesame Seitan
Serves 4
6 seitan cutlets
1 cup unbleached all-purpose flour
1 cup panko crumbs
1 teaspoon paprika
1 teaspoon sea salt
½ teaspoon garlic powder
¼ cup raw cashews
½ cup unsweetened plain vegan milk
Neutral oil, for frying
1 cup Jack Daniels Glaze
1 teaspoon toasted sesame seeds
1. Cut the seitan into 1-inch strips. Combine the flour, panko, paprika, garlic and salt in a shallow pan. Set aside.
2. Blend the cashews and milk until smooth using a blender and transfer to a separate shallow pan.
3. Dredge each seitan piece in the flour, then in the milk and back into the flour. Set aside.
4. Heat 1-inch oil in a large skillet over medium heat. Add 2 kernels of popcorn. When the popcorn pops, the oil is at the correct temperature. Cook the battered pieces in the hot oil until golden brown, about 2 minutes per side.
5. Toss the fried pieces with the glaze and sprinkle with the sesame seeds. Serve the strips with any leftover glaze.
