Yield: 4 large sandwiches
3 tablespoons vegan butter
16 slices Tofurky deli slices or other vegan turkey slices
12 slices vegan bacon, cooked
8 slices vegan cheese or 8 tablespoons shredded vegan cheese
8 slices tomato
8 slices sourdough bread
1. Heat a large skillet over medium heat. Melt 1 teaspoon of butter in the pan. Divide the Tofurky into 4 stacks of 4 slices each. Cook each stack until golden brown on both sides, about 30 seconds per side. Do not separate the individual pieces. Remove the stacks from the pan and set aside.
2. Spread the remaining 2 tablespoons of butter on one side of each bread slice. Place 4 of the bread slices in the skillet, buttered side down. Place 2 slices of cheese or 2 tablespoons of shredded cheese on the bread slices in the skillet. Top the cheese with 1 stack of deli slices, 3 slices of vegan bacon, and 2 tomato slices. When the cheese has melted and the bread is golden brown, place the 4 remaining slices of buttered bread on top to complete the sandwiches.
3. Flip the sandwiches and cook on other side until golden brown. Remove from heat and cut each sandwich twice to yield 3 smaller sandwiches. Serve with pickles and fries.
Tip: To melt vegan cheese, it is helpful to add a teaspoon of water to the skillet and cover immediately with a lid.
