Frito Chili Pie
Serves 4
1 (10-ounce) bag Fritos Corn Chips, or other corn chips
3 cups vegan chili
2 cups shredded vegan cheese or 2 cups vegan cheese sauce
Vegan sour cream, optional
Jalapeño slices, optional
Shredded lettuce, optional
Diced tomatoes, optional
1. Preheat the oven to 350-degrees F.
2. Layer the Fritos in an oven-safe casserole dish. Spread the chili evenly over the chips.
If using shredded cheese, sprinkle the cheese over the chili. If using the Cheese Sauce, proceed to step 3.
3. Bake the casserole until the cheese melts and the chili and chips are hot, about 10 minutes. If using the Cheese Sauce, bake the chips and chili in the preheated oven until they are hot, about 10 minutes. Remove from the oven and pour the Cheese Sauce over the chili. Serve the casserole with any of the optional toppings.
