BBQ Beet Sliders
Ingredients:
4 cups water
¼ cup A-1 sauce or steak sauce
¼ cup tamari
2 tablespoons dijon mustard
2 tablespoons oil
1 teaspoon pickling spice
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon caraway seeds
½ teaspoon liquid smoke
2 tablespoons nutritional yeast
4 beets, peeled
oil, as needed
steak sauce, as needed
vegan cheese, optional
BBQ sauce, as needed
8 slider buns
crispy onion strings, like French’s
1) Combine the water, steak sauce, tamari, mustard, oil, spices, smoke, yeast and beets in a medium pot. Bring the mixture to a boil, reduce it to simmer and covered until the beets are tender.
2) Remove the beets from the cooking liquid, cool, slice into ½ to ¾ -inch slices. You should have 8 nice slices of beets.
3) Heat a large skillet over medium-high heat. Add oil and saute each beet slice on both sides. After flipping the slices, baste with some steak sauce. Melt cheese over the beet slices, if desired.
4) Toast the buns. Spread some BBQ sauce on each side, top with beet and fried onions. Serve.
