Zesty Corn Salad:

Ingredients:

• 2 (15 ounce) cans whole kernel yellow corn
• 1 red bell pepper, minced
• 1 jalapeño, halved, deseeded & minced
• 1/2 cup chopped cilantro
• 1/2 lime, juiced
• Salt & pepper to taste

Directions:

Place all ingredients into a medium bowl and combine. Season with salt and pepper until desired taste is achieved. Cover and refrigerate until ready to use.
