1 T. olive oil
1 T. butter
1 t. peppercorns
2 ~4-6 oz. tuna steaks
salt, pepper, cayenne, paprika, lemon pepper, etc., as desired
Pat fish dry and sprinkle with salt, pepper, and/or other desired seasonings.
Put oil and butter in a skillet. Add 1 t. peppercorns.
Heat over medium-high heat until peppercorns begin popping.
Cook tuna steaks 1-2 minutes per side, depending on thickness. The center should still be rare.
