Chicken Caesar Crunch Wrap

Dressing Serves 6:

½ cup nonfat Greek yogurt (120g)

2 Tbsp. lite mayo (30g)

2 Tbsp. lemon juice (30g)

2 Tbsp. red wine vinegar (30g)

1 Tbsp. olive oil (15g)

1 Tbsp. dijon mustard (15g)

2 frozen garlic cubes, or minced cloves

2 tsp. worcestershire sauce (10g)

2 Tbsp. grated parmesan (10g)

1 tsp anchovy paste (5g)

¼ tsp salt

¼ tsp black pepper

Wrap Serves 1:

2 cups romaine lettuce, chopped (100g)

3.5 oz grilled chicken breast, chopped (100g)

4 Tbsp grated parmesan cheese, divided (20g)

1 Cut Da Carb wrap

2 tsp honey mustard (10g) optional

½ cup heirloom or beefsteak tomato, sliced thick (85g)

½ tsp salt

⅛ tsp pepper

Whisk dressing ingredients until creamy and smooth. For one wrap, toss 48g of dressing with romaine, grilled chicken and half the parmesan cheese. Season with some salt and pepper and add an extra squeeze of lemon if you’ve got it and you’d like! (I like.)

Heat a not-stick pan to medium/high heat. (I like it pretty hot but don’t want to set you up to burn your wrap so go as hot as you can without smoking up the place!) We just want the pan hot by the time our wrap is built so you can start low if you’d like.

Place your wrap flat on a plate. Spread honey mustard in a circle in the middle. Place the thick sliced tomatoes on top, and pile on the caesar salad. If it’s too full, you can enjoy some of the salad on the side!

Move your plate (with open, topped wrap) right next to the pan for a smooth transfer. Spray the pan with cooking spray and sprinkle with parmesan cheese, THEN begin quickly wrapping. Fold bottom right corner toward the middle, then bottom left corner, left side, right side (holding it all in gently as you go), then top left, and top right.

Hold the wrap together like it's a precious gem and carefully place it folded-side down onto your hot pan. Spray the top with cooking spray and sprinkle with coarse salt. Let it cook for a minute or two, until the cheese is browned, crispy and the wrap is sealed.

Flip carefully and cook the other side for a minute. Remove from pan and slice in half, using sawing motions, with a bread knife. Eat immediately, preferably with nobody bugging you, because that's the worst.

NOTES:

GF/DF: I can’t say I’ve found a gluten free wrap that rivals the size/shape/macros of this one. But I have gotten creative with large gluten free tortillas like “Eat Sana” and “Siete” and those are still great! To avoid dairy, you could swap in a dairy-free parmesan, and skip the Greek yogurt and use all mayo, or a dairy-free yogurt or my favorite, Forager Plant Based sour cream.
