BLT Egg Salad Sandwiches

Prep Time: 10 minutes Cook Time: 5 minutes Wait time: 10 minutes Serves: 4  

6 large eggs

3 tablespoons mayonnaise

1 tablespoon Dijon mustard

1-2 teaspoons hot sauce

½ teaspoon black pepper (or to taste)

¼ teaspoon salt (or to taste)

1 tablespoon parsley, chopped (or 1 teaspoon dried parsley)

5 slices bacon, cooked and chopped

½ cup grape tomatoes, quartered lettuce, as needed for serving

8 slices bread, for serving

Set eggs in a single layer in a saucepan and cover with two inches of water.  Bring the water to a full, rolling boil, and boil for 1-2 minutes. Turn off the stove and let eggs stand, covered, for 10-12 minutes.  

Place eggs in a large bowl full of water and ice. Crack and peel away shells and chop cooked eggs.  

In a medium bowl, combine eggs and remaining ingredients, stirring until well mixed.  

Serve prepared egg salad on bread with lettuce.
