Gremolata
Makes about 1 cup
½ cup panko crumbs
zest of 2 lemons
zest of 1 large orange
4 garlic cloves
½ bunch of parsley leaves
Sea salt and fresh ground black pepper
1. Toast the panko crumbs in a 350-degree oven until golden, about 3 minutes.. Watch carefully to prevent burning.
2. Process the toasted crumbs, lemon zest, orange zest, garlic and parsley in a food processor until well minced. Add salt and black pepper, to taste.
