Roasted Lima Beans

Here’s a simple and effective preparation for those sweet little beans we call lima.

1 pound (455 g) lima beans, fresh, frozen, or canned

1 red onion, sliced into julienne

2 tablespoons (30 g) minced garlic

2 tablespoons (30 ml) extra-virgin olive oil

2 tablespoons (30 ml) balsamic vinegar

Salt and pepper, to taste

 

Preheat the oven to 350°F (180°C, or gas mark 4). Line a baking sheet with aluminum foil (makes cleanup a snap).

In a bowl, toss together all the ingredients to coat and spread evenly on the baking sheet.

Bake for 20 to 25 minutes, or until the lima beans are tender and the onions are translucent and beginning to brown.

Yield: 4 servings
