Lib’s Cornbread
¾ c. cornmeal
¼ c. flour
1 ½ (2) tsp baking powder
1 lg. egg
¾ - 1 c. milk or buttermilk
oil
Coat the bottom of a cast iron skillet with oil and place in a cold oven. Heat the oven to 375°F.
Mix remaining ingredients and allow to stand. The batter should get puffy.
When oven is heated and oil is hot, add batter to skillet and bake 20-25 minutes until golden.
