Scalloped Corn with Cornmeal

2 cans cream corn

¼ cup butter, melted

2 eggs, slightly beaten

1 box Jiffy Corn Muffin mix

½ cup milk

¼ cup sugar

¼ cup diced onion (optional)

Preheat oven to 350 degrees F.

Combine all ingredients.  Pour into a 2 to 3-quart baking dish that has been sprayed with cooking spray.

Bake, uncovered, for 1 to 1 & ½ hours or until browned on top and center is cooked.
