Whole30 January 2014 -- Week 2

 

Breakfast

Day 6 (Mon)

Roasted chicken & vegetable soup 

(add zucchini)

Leftover Pumpkin chili

Crockpot herbed chicken (Can use 2lb chicken breast & make  half the recipe) + steamed broccoli w/lemon + mashed cauliflower w/roasted garlic (chop & steam cauliflower, mix with ghee + garlic + S&P)

Day 7

Roasted chicken & vegetable soup

Taco salad over spinach/romaine

(grass-fed ground beef with onions/bell peppers/taco seasoning) + paleo ranch

Crockpot herbed chicken + spinach salad + mashed cauliflower w/roasted garlic

Day 8

Roasted chicken soup (if leftover) OR egg & vegetable scramble + bacon

Taco salad + paleo ranch (I use the recipe from “It Starts With Food” but this one is good too!)

Crockpot beef roast (I’m leaving out all veg & red wine, just using onions, garlic & the seasonings) + roasted carrots and zucchini + mashed parsnips w/ roasted garlic

Day 9

Apple, pecan & bacon butternut squash hash 

(add wilted kale) +/- fried egg

Raw kale salad with apples + baked chicken +/- bacon + balsamic vinaigrette

Crockpot beef roast + roasted carrots and zucchini + mashed parsnips (if leftover)

Day 10 (Fri)

Apple, pecan & bacon butternut squash hash 

(add wilted kale)

+/- fried egg

Raw kale salad with apples + baked chicken +/- bacon + balsamic vinaigrette

Garbage stir fry 

(add zucchini, frozen vegetables)

Day 11

Asparagus benedict + greens sauteed in ghee (using what spinach/kale is left from the week)

Garbage stir fry or other leftovers

Prosciutto pesto chicken roulade (I’m doing half the recipe for two of us) + lemon broccoli + another vegetable

Day 12

Italian baked eggs + apple slices or other fruit leftover from the week

Leftovers from the week OR deli roll ups + veggies OR grilled chicken sausages (I always keep a pack frozen) + green salad w/ paleo ranch

Grilled tuna steaks + roasted carrots and Brussels sprouts + sweet potatoes (depending on how many we’ve eaten this week)
