Summer version:

10 oz. fresh baby spinach

1 lb. strawberries, sliced (can use diced fresh peaches)

1 pt. blueberries

¼ - ½ c. nuts (candied pecans or walnuts, or sliced almonds)

3-4 oz. crumbled goat cheese

citrus dressing, poppy seed dressing,or favorite vinaigrette, to taste

Fall/Winter version:

10 oz. fresh baby spinach

1 can mandarin oranges, well drained

1 c. dried cranberries or dried cranberries and raisins

2 fresh pears, diced

¼ - ½ c. nuts (candied pecans or walnuts, or sliced almonds)

3-4 oz. crumbled goat cheese

poppy seed dressing or vinaigrette, to taste

Toss salad ingredients in a large bowl. Lightly coat with dressing and toss again. Serve chilled.
