Mike’s Traditional Pizza
Pizza dough, enough for 2 (12-inch) pizzas
Cornmeal, as needed
Pizza Sauce (recipe below)
4 garlic cloves, minced
Vegan pepperoni (instructions below)
Vegan sausage (recipe below)
1/2 sweet onion, sliced thin
Vegan cheese, as needed
Preheat the oven to 450 degrees.
Rise the dough, if needed. Divide the dough in half and roll each half out to 12 inches. Spread cornmeal on the baking sheet and transfer the dough to the baking sheet. Bake the dough for 5 minutes. Remove the pizza from the oven. Top each pizza with 1/4 cup of the pizza sauce, spreading it out thin. Top with each pizza with half of the garlic, half of the pepperoni, half of the sausage and half of the onion. Add enough cheese to your liking. Bake the pizza in the preheated oven for about 20 minutes, or until the crust is golden and the cheese has melted.
Italian Pepperoni
Yves vegan pepperoni
Olive oil, as needed
Sauté the pepperoni in the olive oil until they develop a bit of color. Set aside.
Italian Sausage
1 package Gimme Lean vegan sausage
3 tablespoons olive oil
4 garlic cloves, minced
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon crushed red chili flakes
Sauté the sausage in the olive oil with the garlic, basil, oregano and chili flakes until the sausage is golden. Break up the sausage using a potato masher. Set aside.
Pizza Sauce
1/2 cup pizza sauce
Sugar, salt, as needed
1/ 4 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon crushed red chili flakes
Combine the sauce, sugar, salt, basil, oregano and chili flakes. Mix well. Taste and adjust seasoning.
