Jalapeño Coins
Serves 6
1 (12-ounce) jar sliced jalapeños, drained well
1 ½ cups ice cold vegan beer
½ cup plus 2 tablespoons unbleached all-purpose white flour
Neutral oil, for frying
Sea salt, to taste
1. Heat 2-inches of oil in a large pot over medium heat. Add 2 kernels of popcorn. When the corn pops the oil is at the correct temperature.
2. Combine the bear and flour in a large bowl. Dip the jalapeños in the batter and fry them until golden, about 2 minutes, stirring halfway through to break up any stuck together pieces. Do not crowd the pot and cook them a few at a time.
3. Drain on paper towels and season to taste with salt.
