Recipe - Main - Fish Tacos

12-16 oz. fish filets (tilapia, flounder, or catfish - mahi mahi is a new favorite!)

Salt, pepper, cayenne, chipotle, or adobo to taste

1 T. olive oil

1 T. butter

Tortillas

Shredded cabbage, sliced radishes, shredded carrots, etc.

Limes

Diced avocado

Hot sauce, sour cream, or cheese, if desired

Melt butter in olive oil over medium heat.

Sprinkle seasonings of choice on both sides of fish filets. My favorites are salt, pepper, and chipotle.

When butter is just beginning to brown, add filets to pan, and cook 1 ½ - 2 minutes per side, or until fish flakes easily with a fork.

Let the fish rest briefly, and then cut into strips.

Serve on warm tortillas (corn or flour) with toppings listed.
