Serves 4 to 6

1 ⅓ cups warm water

2 teaspoons dry active yeast

7 tablespoons olive oil, divided

2 cups whole wheat pastry flour

2 cups unbleached all-purpose white flour

3 tablespoons plain soy milk powder

2 teaspoons dried oregano

1 teaspoon sea salt

Topping Mixture:

2 tablespoons vegan parmesan cheese (Parma brand is recommended)

1 tablespoon garlic powder

1 tablespoon sea salt

1 tablespoon onion powder

1 tablespoon dried oregano

1. Combine the water and yeast in a small and set aside for 5 minutes to activate the yeast. Add 3 tablespoons of oil to the yeast mixture.

2.  Add the flours, milk powder, oregano and salt to a food processor. Pulse to mix ingredients. Add the yeast mixture and process until the dough comes together into a ball, about 1 minutes. Add a few tablespoons of flour if the dough is too sticky.

3. Oil a large bowl with 1 teaspoon of olive oil. Transfer the dough to the prepared bowl. Cover the bowl with a plastic wrap and set aside in a warm area for about 1 hour or until the dough doubles in size.

4. Lightly oil two baking sheets. Transfer the risen dough to a lightly floured work surface and roll it into a rectangle, ¼ inch thick. Using a pizza cutter, slice the dough into pieces about 4 inches long and 1 inch wide. inches. Place the dough pieces on the prepared baking sheets, cover lightly with plastic wrap and allow to rise until doubled, about 30 minutes.

5.  Preheat the oven to 375-degrees F. Combine the topping ingredients, vegan cheese, garlic powder, salt, onion powder and oregano in a small bowl. Generously brush each piece of risen dough with the remaining 4 tablespoons of olive oil and sprinkle with the topping mixture, adding as much as you care for but being aware that it is salty .

6. Bake for 15-30 minutes or until golden brown. Allow to cool slightly and serve.
