Tenderstem Broccoli and Tofu Sesame Stir Fry


(Serves 2)

1 tbsp sesame oil

1 inch cubed of root ginger (grated)

1 garlic clove (crushed)

Handful of tenderstem broccoli

Handful bamboo shoots

1 bunch spring onions

1 red pepper

1 pak choi

1 pack of marinated tofu (cut into bite size pieces)

Juice of half a lime

1 tbsp sesame seeds


Pour the sesame oil into a wok and heat on high. Fry off the ginger and garlic in the oil for a few seconds before adding the broccoli and tofu for 2-3 minutes. Keep the ingredients moving around the wok at all times.

Next add the red pepper (sliced into thin strips) and spring onions (again sliced thinly) along with the leaves of th epak choi. Stir fry for another 2-3 mins until the pepper has begun to soften.

Finally, add in the bamboo shoots, lime juice and sesame seeds and fry on high for a further 2 – 3 mins until the vegetables are tender and tofu is cooked through.

Serve hot from the wok with an extra sprinkling of sesame seeds if you can!
