Hibiscus-Mint Tea

Serves 4


2 cups boiling water

1 tablespoon hibiscus flower

Sweetener, as needed

2 cups cold water

⅛ to ¼ teaspoon mint extract

Lemon wedges, as needed

1. Steep the flowers in the boiling water for 10 minutes. Strain the tea and transfer it to a quart jar. Add sweetener, as needed.

2. Stir in the cold water and mint extract. Taste and adjust seasoning with sugar and mint.

3. Chill the tea thoroughly and serve with lemon wedges.
