Peach Pie Baked Oatmeal (single serving)
Ingredients:
1/2 cup quick oats or old fashion rolled oats
1 teaspoon brown sugar
1 teaspoon granulated sugar
1/2 teaspoon cinnamon
1/8 teaspoon ginger
1/8 teaspoon nutmeg
Pinch of salt
1/2 cup milk
1 tablespoon plain yogurt
1/4 teaspoon vanilla
1/2 of a peach cut into small cubes
Directions:
1. Preheat oven to 350 degrees F. Lightly butter a ramekin or custard cup
2. In a small mixing bowl add all of the dry ingredients and mix well.
3. In another small bowl mix the milk, yogurt, and vanilla.
4. Add the wet ingredients to the dry ingredients, mix until well blend.
5. Add the peaches and fold in. Add this mixture to the prepared ramekin
6. Place in the preheated oven and bake for 20 minutes or until lightly browned and set
