Tangy Marinated Coleslaw

4 cups coarsely shredded green cabbage

1 medium cucumber, thinly sliced

1 cup coarsely shredded carrot

1/2 cup diced red onion

1/2 cup diced green bell pepper

1/4 cup cider vinegar

1 Tbsp. sugar

1 Tbsp. Dijon mustard

1 Tbsp. vegetable oil

2 tsp. prepared horseradish

½ tsp. pepper

1/4 tsp. salt

Combine first 5 ingredients in a large bowl; toss well.

Combine vinegar and remaining 6 ingredients in a

jar. Cover tightly, and shake vigorously. Pour over vegetables; toss gently.  Cover and chill 8 hours. Serve chilled or at room temperature. Makes 6 Cups.
