Gremolata Salad
Serves 2 as a meal, 4 as an appetizer
1 bunch parsley, leaves only, about ½-cup (12g), minced
1 medium cucumber, peeled and diced
1 jarred roasted red pepper, diced
2 scallions, minced
2 garlic cloves, minced
Zest of 1 lemon
½ tablespoon (8 mL) olive oil
¼ teaspoon red pepper flakes
Sea salt and fresh ground black pepper, to taste
1. Combine the parsley, cucumber, roasted pepper, scallions, garlic, zest, olive oil, red pepper flakes in a small bowl. Season to taste with salt and black pepper. Set aside for 10 minutes to marry the flavors. Serve.
