Toasted Noodles with Greens and Beans

Ingredients;

1 t to 1 T olive oil

1/2 pound angel hair pasta, can be whole wheat or brown rice, etc.

2 c tomatoes, diced or  1 15 oz-can diced tomatoes, drained lightly

1 t sweetener

1 t salt

fresh black pepper

1 T onion, minced

leafy greens, 1  bunch, washed and stemmed, if needed (spinach, kale, etc,)

1 can beans, drained and rinsed (Eden brand has no BPA) (black beans, white, navy, etc.)

2 c vegetable broth

Better Than Sour Cream or cashew sour cream

Garlic Toast

Preheat oven to 350. Mix the angel hair pasta with the oil in a shallow casserole dish or oven-safe pan. Bake for 15 minutes, stirring at the halfway point. In the meantime:

Simmer the tomatoes, sweetener, salt, black pepper and onion in a medium saucepan,  covered.  Stir occasionally, Cook for 15 minutes. In the meantime:

Cook the greens by steaming, until tender.

In a bowl mix the tomato sauce, greens, beans, noodles and vegetable broth very well. Transfer the mixture to a shallow baking pan, preferably the one you just toasted the noodles in, but make sure the dish is cool enough if it is glass to avoid shattering it. Return the casserole dish to the oven and bake for 30 minutes.

Serve with sour cream and garlic bread.
