Chipotle Chili

Heat:

        1 T. oil

Saute:

        2 onions, chopped

        4 celery, chopped

        2 peppers, chopped

        3 garlic cloves, diced

        2 bay leaves

        1 t. cumin, ground

        1 T. oregano

        1 T. salt

Cook until vegetables are slightly browned.

Add:

        2-24 oz. cans whole tomatoes

2 T. chili powder

1 can kidney beans, rinsed

1 can pinto beans, rinsed

2 cups TVP granules, OR  1 more can of each bean

1 t. chipotle adobo sauce, up to 3 chipotle peppers, diced

Cook the chili on low for 2 hours, or in  a slow cooker for 6-8 hours.

Enjoy with cornbread.
