Raw Sun-Dried Tomato Dip or Spread

Ingredients:
2 cups almonds
1 t salt
2 garlic
1 T lemon juice
1/2 c sun-dried tomatoes, diced
1/2 c fresh tomatoes, chopped
1/4 c water
1/4 c water
Put the almonds, salt, garlic, lemon juice, tomatoes and 1/4 c of water in the blender. Blend. Scrape. Blend. Scrape. Taste. Does it need more lemon juice or salt? Is it tangy enough? If you need to add more water, add the other 4 Tablespoons, one at a time until you can get the spread to be very smooth. Do not make it thin or you will not be able to form it. If you want a dip, the extra water is okay.
To make them into ‘cheese’ (almost like a cream cheese), form them into disks and roll them in an herb, like chopped basil, or in red chili flakes (spicy!) or in crushed nuts - like a port cheese.
