Raw Kale Salad

2 bunches kale, washed, de-stemmed, chopped into bite-size pieces

1/2 c olive oil

3 T lemon juice

1 t salt

1 red onion, sliced thin

1 avocado, diced

1 c shiitake mushrooms, sliced thin (opt)

1 c cherry tomatoes, halved

Prepare your kale.

Mix the olive oil, lemon juice and salt together. Pour over the kale. Massage the leaves with the dressing really well. Squeeze the kale leaves, breaking apart the cell walls of the kale. Your 2 bunches will be reduced to a quarter of the size.

Mix the kale with the onion, avocado, mushrooms if using and tomatoes if using. Let sit in the fridge for about an hour or more. The longer the better.
