Raw Flax Crackers

Raw flax seed crackers are ubiquitous; they are the cracker to make. The flax is not only a nutrient-dense seed, containing Omega-3 Fatty Acids, to boot, but congeals well to hold the cracker together extremely well. This cracker is very versatile, too.  Oh, and it tastes good.

Ingredients;

1/2 c bell pepper, or cucumber or celery

1/2 c herb basil or cilantro

1/2 sun-dried tomatoes (opt)

1 1/2 c fresh tomatoes, chopped

2 cloves garlic, chopped

1 T olive oil (opt.)

1/4 c raw soy sauce or 1 t salt

2 c flax seeds

In a blender place all the ingredients except the flax seeds. Blend very well.

Put the flax seeds in a big bowl and mix with the tomato mixture.

Spread the mixture on oiled dehydrator sheets. Dehydrate on 105 for 3 hours. Cut the sheets into cracker sized pieces and transfer to a mesh tray. Dehydrate on 105 until crisp, about another 3 hours.

If you do not have a dehydrator, use the oven on the lowest setting, but it probably will not be ‘raw’ according to a food being ‘live,’ but it will give you a good idea of the flavor and texture.
