New Years Eve Prime Rib

Serves 6

Ingredients

3 bone Prime Rib Roast bone in (also known as Standing Rib Roast)

Kosher Salt

Black Pepper

Fresh Thyme

3 Garlic Cloves thinly sliced

3 cups Red Wine

4 cups Beef Stock

Instructions

Let your roast stand at room temperature for at least 1/2 hour.

Preheat your oven to 450 degrees. Cover your roast in salt, pepper and fresh thyme. Cut small slits around the roast and put a slice of garlic in each hole. Place the roast on a roasting rack and put in the oven for 20 minutes.

Turn the oven down to 350 degrees. Cook for an additional 2 to 2.5 hours until the internal temp is 135 degrees. Make sure you are getting your thermometer into the center where it is thick. Once done,  let the roast rest for at least 30 minutes.

In the meantime, place the roasting pan over a stove burner on medium-high heat. Add the red wine and scrape all the bits off the bottom of the pan with a wooden spoon. Let the alcohol cook off for a minute or two then add the beef stock and season with salt, pepper and additional thyme. Once boiling, turn the heat down slightly and let it boil until it reduces by half. Serve these au jus with slices of prime rib.

To cut the prime rib, first cut along the bones to remove them. Then slice the roast into even pieces.
