Cheddar Garlic Biscuits

1-3/4 cups flour
1 tbsp plus 2 tsp baking powder
2-1/2 tsp sugar
1/4 tsp salt
3 tbsp shortening
4 tbsp cold butter, cut into 1/2 inch pieces
6 oz. shredded cheddar cheese (about -1/4 cups)
3/4 cup milk
Garlic Butter:
3 tbsp butter
1 clove garlic, smashed
1 tsp chopped fresh parsley
Preheat oven to 425. Lightly spray cookie sheet with nonstick cooking spray.
To make the biscuites, combine flour, baking powder, sugar and salt in a food porcessor. Pulse to combine. Add shortening and pulse until combined. Add cold butter and pulse until mixture is crumbly. Add the cheese and pulse a couple more times. Pour in the milk and pulse until the mixture is combined.
Drop the dough by scant 1/4 cup portions onto prepared cookie sheet. Bake for 15-20 minutes or until golden brown.
While biscuits are baking, prepare garlic butter. Melt the butter with the garlic in a small saucepan over medium heat; cook for one minute. The butter will absorb the garlic flavor. Remove from heat and stir in parsley. Brush the warm biscuits with the warm garlic butter and serve immediately.
