Smothered Pork Chops

1 cup olive oil
2 tbsp lemon juice
5 cloves garlic, minced
Zest of one lemon
1 tsp salt
1 tsp pepper
1 tsp basil
1 tsp rosemary
4 boneless pork chops (about 1/2 inch thick)
Topping:
Butter
1 onion, sliced
Shredded Colby-Jack cheese
In larget ziplock bag, combine oil, lemon juice, garlic, lemon zest, salt, pepper, basil, parsley and rosemary. Add pork; seal bag and turn to coat. Refrigerate for 2 hours or overnight.
About one hour before you're ready to cook the pork chops, melt some butter in a saucepan. Add in the sliced onion and cook over low heat until the onion caramelizes; about 45 minutes to an hour.
Drain and discard marinade. Broil pork chops 3-4 inches from heat for about 5 to 6 minutes on each side until done. Top with caramelized onions, then shredded cheese. Broil 1-2 minutes longer to melt the cheese.
