Sundried Tomato Pasta Salad
Dressing:
1/2 pkg sundried tomatoes
4 cloves garlic
3 tbsp lemon juice
1 cup olive oil
salt and pepper
Salad:
16 oz pasta
3-4 slices bacon, diced and cooked till crisp
1 jar olives, chopped
1 pint cherry tomatoes, halved
10-15 fresh basil leaves (or about 2 tbsp dried basil)
1 1/2 cups freshly grated parmesan cheese
Prepare dressing by placing sundried tomatoes, garlic and lemon juice in food processor with a little salt and pepper. Blend to break up the tomatoes a bit. Start adding some olive oil until it reaches a thin paste-like consistency.
Cook pasta according to package directions; drain and rinse with cold water. Place pasta in large serving bowl. Pour about 1/2 to 2/3 of the dressing over the pasta, add olives, cherry tomatoes and bacon. Add more dressing until it reaches the desired consistency. Stir in 1 cup of cheese. Top with remaining 1/2 cup cheese.
