Day 1


Seasoned Chicken Strips

Serves 6 @ 3 pts. Each

  

1 ½ lb. Chicken breast tenderloins

1/2 cup egg substitute, 1T mustard

1T minced garlic, 1 cup dried bread crumbs

2 t. dried basil, 1 t. paprika, ½ t. salt, ¼ t. pepper


Prep: Combine egg sub, mustard and garlic in a shallow bowl. In another bowl add breadcrumbs and seasonings. Dip chicken into egg mixture and then into dry crumbs. Bake 15 min. @ 400.


Greek Green Beans

Serves 6 @ 2 pts.


1 lb. fresh green beans

1T greek seasoning, 1 T reduced cal. Margarine


Prep: Boil green beans and ¾ T greek seasoning until crispy tender. Drain, wipe boiler dry and add 1 T. reduced cal. Margarine & ¼ T. greek seasoning. Add beans and sauté for 2 min.



Day 2


Parmesan Baked Tilapia

6 servings @5 pts each


Ingredients:


6 – 4 oz Tilapia fillets
(¼ c FF mayo, 1 T Worcestershire)
3 T grated fresh Parmesan cheese
½ c chopped green onions


Prep:


Place fish in a sprayed baking dish. Mix remaining ingredients and spread over fish. Bake uncovered 12 – 15 min @ 450 or until fish flakes easily.


White Rice-Chubbie Chica Style

6 servings @ 4 pts


Ingredients:


3 c. white rice,  1 c. chopped onions,  1/4 c. minced garlic


Prep:


Combine ingredients with 6 cups of water and cook until done.  Serving size = 1 cup


Day 3

Chicken Pot Pie
Serves 6 @7 pts

Ingredients:

3 C. chopped cooked chicken breast
1 lb. frozen mixed vegetables, thawed
1 can FF Cream of Chicken Soup
1 can FF Cream of Mushroom Soup
1 1/2 C. RF Bisquick
3/4 C. FF Milk
1/4 C egg substitute

Prep:

boil 1 1/2 lbs of chicken breast and chop.  Mix 3 C. chopped chicken, veggies and soup in a 9x13, sprayed, baking dish.  Combine Bisquick, milk and egg substitute.  Pour over chicken mixture.  Preheat oven to 400 and bake for 30 minutes or until golden brown.  Divide into 6 portions.

Jello Pudding
1 Cup = 2 points


Day 4

Lemon Basil Pork Chops
1 chop = 6 pts

Ingredients:

2 t. lemon juice
2 eggs, lightly beaten
3/4 C. Italian bread crumbs
1 T. grated lemon zest
1 t. dried basil
6 center cut pork chops

Prep:

Small dish, combine lemon juice and eggs.  In another shallow dish, combine bread crumbs, lemon zest and basil.  Dip chops in egg mixture, then into bread crumb mixture coating both sides of chop, and place into a sprayed 9x13 baking dish.  bake 30 min. @ 350. 

Baked Sweet Potatoes
1 potato = 3 pts


Ingredients:

6 large sweet potatoes
cinnamon
splenda
spray butter

Prep:

Pierce potatoes and bake in oven 1 hour @ 375.  Once out of oven, split, and sprinkle with cinnamon, splenda, and spray butter.


Day 5

Cheesy Vegetable Chowder
1 1/2 cup = 4 points

Ingredients:

2 - 14 oz. cans FF chicken broth
2 chicken bullion cubes
14 oz. can corn
14 oz. can diced tomatoes with onions and garlic
1/2 bag frozen okra
1/2 can Rotel
1-14 oz. green beans with potatoes
4 oz. velvette light

Prep:

Combine all ingredients, except velvetta, in a large stockpot and bring to boil.  Reduce heat, cover and let simmer for 30 minutes.  Add velvetta, simmer and stir until melted. Serve!

Texas Toast-Light
1 slice = 3 pts

Ingredients:

1 box of Texas Toast-light

Prep:
Prepare as directed

Day 6

Chicken Spaghetti
Serves 6 @ 5 Pts

3 c cooked diced chicken
3 oz Velveeta light cheese
4 oz can chopped green chilies
10 oz can FF cream of mushroom soup
3 c cooked spaghetti pasta
½ c chopped onion
½ c red bell pepper, (1 t salt, 1 t pepper)


Prep: 

Boil or bake 2 split chicken breasts until done and pull and dice 3 c chicken meat. In a large saucepan, mix Velvetta, chilies, and soup and heat on low for 5 min. Add all other ingredients and mix
well. Pour into a sprayed 9 x 13 baking dish, cover with foil and bake for 30 min @ 350. Divide into 6 equal servings.

Romaine Mandarin Salad
2 Pts

1 bag Romaine
¼ c bacon bits
11 oz can mandarin orange, drained
(FF Raspberry Vinaigrette)

Prep:

Toss Romaine, bacon bits, and orange slices together and divide into 6 portions. Use 2 T vinaigrette on each portion.


Day 7
Kickin Meatloaf
6 servings @ 4 pts each

Ingredients:
1 ½ lb lean ground beef
(1 c salsa)
¼ c quick cook oatmeal
½ c shredded carrot
2 tomatoes-diced
½ c chopped fresh mushrooms

Prep:
Combine all ingredients and shape into a loaf. Place loaf in a sprayed loaf pan and bake 1 hour @ 350. Divide into 6 servings.

English Peas
6 servings @ 1 pt each

Ingredients:
3 – 14 oz cans English peas

Prep:  Heat as directed.  Sometimes I throw in 1 T. minced garlic.

Mashed Potatoes
½ c serving @ 3 pts each

Ingredients:
1 box Betty Crocker Roasted Garlic potatoes

Prep:
Prepare potatoes as directed. Serve ½ c potatoes on the side.
