Meatloaf
 
1½ - 2 pounds hamburger meat, lean
1 can Mild diced tomatoes with green chiles (Rotel)
½ cup ketchup
1 cup seasoned bread crumbs
2 eggs
fresh ground black pepper to taste
ketchup for topping, if desired
 
Preheat oven to 350F.  Spray 9x13 baking dish with nonstick spray.  In large bowl, mix hamburger meat, tomatoes, ketchup, bread crumbs, eggs and pepper until well combined.  The meat should hold shape.  Add additional bread crumbs if needed.  Pour and spread evenly into prepared baking dish.  Bake 35-40 minutes.  Spread additional ketchup over top and return to oven for 10-15 minutes.  Serves 6-8  Note - leftover meatloaf can be seasoned up for quick tacos or for meatloaf sandwiches.

 

 
 
Chicken Fried Rice
 
1 pkg Knorr's Rice Sides Chicken Fried Rice 
1 pound boneless, skinless chicken breasts
Salt and pepper to taste
2 tbsp olive oil
 
Cut chicken into bite size pieces.  Season with salt and pepper to taste.  Brown chicken in olive oil.  Prepare fried rice per instructions.  Stir in chicken after 7 minutes of simmering.  Serves 4
 
 
 
Sausage Stew
 
16 oz smoked sausage, cut into 1/4 inch slices
1 large onion, chopped
2 cloves minced garlic
1 medium zucchini, cut into 1/4 inch slices
8 oz sliced, fresh mushrooms
2 - 14.5 oz cans Italian stewed tomatoes
1 tsp dried basil
1/4 tsp crushed red pepper

 
Cook sausage, onion and garlic in large, deep skillet over medium heat for about 5 minutes.  Add zucchini and mushrooms; cook 5 minutes.  Add remaining ingredients and bring to a boil.  Reduce heat, cover, and simmer for 25 minutes; stirring occasionally.  Serves 4-5 
 
 
 
BBQ Chicken
 
4 boneless, skinless chicken breasts
1/2 c. Ranch salad dressing
1/2 c. BBQ sauce
salt and pepper to taste
 
Season chicken with salt and pepper.  Place chicken into bowl and pour Ranch dressing over chicken.  Rub dressing into chicken and let marinate 30 minutes.  Heat grill to medium-high heat.  Grill chicken until cooked through.  Baste with BBQ sauce during last 5 minutes.



Chicken Fried Steak
 
1 1/2 pounds tenderized round steak
Fajita seasoning
black pepper
1 c. all purpose flour
2 eggs, well beaten
peanut oil for frying


Preheat oil in electric skillet to 350F.  Season steak with fajita seasoning and pepper.  Place flour in pie plate.  Dredge steak in flour, egg mixture and back in flour.  Fry until golden brown and cooked through; about 5 minutes per side.
