Chicken Broccoli Noodles

Chicken breasts - in freezer, 2 per bag
Chicken-flavored Ramen noodles
Chopped broccoli - partial bag in freezer

Dice chicken into bite-size pieces.  Season with salt and pepper and saute in 2 tbsp olive oil.  Meanwhile, bring water and Ramen seasoning packet to a boil, add chopped broccoli; boil for 4 minutes.  Add noodles to broccoli and water and cook for 3-4 minutes or until noodles are cooked.  Stir in chicken before serving.



Pantry Chicken & Rice


Minute Rice
Chicken broth
Cream of mushroom soup
Canned chicken

Prepare desired amount of Minute Rice per package instructions substituting chicken broth for water.  Stir in mushroom soup and canned chicken; heat through.



Shrimp Pasta Roni


1 box Pasta Roni Garlic & Olive Oil Vermicelli
1/2 pound frozen shrimp, cooked or raw;  you can also use chicken

Prepare vermicelli per package directions.  Meanwhile..if shrimp is raw, peel and de-vein shrimp and season with salt, pepper and granulated garlic.  Saute shrimp in 1-2 tablespoons olive oil until pink.  Stir cooked shrimp into cooked vermicelli and serve with salad and garlic bread.  No garlic bread?  Just butter sandwich bread, sprinkle with granulated garlic, and broil until toasted. 



Chili Night


Canned chili

Add Fritos and cheese for Frito Pie.
Check freezer for hot dogs and enjoy chili dogs (no buns, just use sandwich bread)



Tomato Artichoke Bow-ties


Canned diced tomatoes
Canned asparagus
Bow-tie pasta

Prepare bow-tie pasta per package directions.  Drain asparagus and cut into 1-inch pieces.  Pour tomatoes and asparagus into medium saucepan over medium heat.  Season tomatoes and asparagus with salt, pepper, and granulated garlic to taste.  Simmer until heated through.  Drain pasta and add to tomato mixture.  Sprinkle mozzarella over pasta before serving.



Some other staples:

    Tomato soup and grilled cheese
    Instant oatmeal - just add some fresh, diced apples or other favorite fruits (blueberries are my faves!)
    Pancakes or waffles
    Omelets - add canned mushrooms, asparagus, or other canned veggies
